Pan fried Scallops & Chorizo

Scallops & Chorizo
  • 4 cooking chorizo cut bite size pieces
  • 12 Scallops (or you could use large raw shelled prawns)
  • 1 roasted red pepper cut into thin strips
  • 1 shallot, finely sliced
  • 3 tbsp olive oil
  • 1 tbsp sherry vinegar
  • Flat leaf parsley
  1. Make a dressing by whisking the olive oil, sherry vinegar and shallot together with some salt and pepper.
  2. Cook the chorizo over a medium heat in a dry frying pan until crisp.
  3. Remove from the pan and increase the heat. Sear the scallops 1 minute each side (or the prawns until pink).
  4. Mix the cooked chorizo and red pepper strips together with the dressing and top with the seared scallops/prawns.
  5. Scatter with chopped parsley.
