Clams, Chorizo, Garlic & Chilli

This dish is wonderful served on its own with some crusty bread or you could serve it with pasta to make a more substantial meal

  • 225g small clams
  • 100g Chorizo de Bellota cut into strips
  • 150ml white wine or dry sherry
  • 2 cloves garlic, thinly sliced 1 red chilli, finely chopped
  • 1 tbsp olive oil
  • Chopped fresh flat leaf parsley
  1. Wash the clams in cold water and throw away any that have broken shells.
  2. Heat the oil in a pan with a lid and add the chorizo and fry for about 3 minutes until it starts to crisp up.
  3. Add the garlic and chilli and fry for a further minute then add the wine/sherry and then the clams.
  4. Put the lid on and cook for about 3 minutes until the clams have opened up.
  5. Sprinkle with the fresh parsley to serve.
