Free range pigs are allowed to roam the mountains and then quartered in specialist lodges in the Basque mountains before being handed over to the master curer Senor Garcia from "El Bordon". What makes their offerings so individual is the fusion of techniques from both La Rioja and Navarra to give a very individual product.

"El Bordon" Is a family run small scale artisan curing house using the same recipes and techniques for over 200 years. Only natural ingredients are used to create their products which are made from the specially selected meat recipe, D.O. smoked paprika, garlic and sea salt.
