Basatxerri pigs are a specialist Basque breed which after rearing are let loose in the mountains of Navarra to forage on mountain grasses, acorns and beechnuts whilst also benefitting from good exercise as both are required to impart fabulous flavour and texture.
"El Bordon" Is a family run small scale artisan curing house using the same recipes and techniques for over 200 years. Only natural ingredients are used to create their products which are made from the specially selected meat recipe, D.O. smoked paprika, garlic and sea salt.
