Chorizo in Red Wine

Chorizo in red wine

Cooking the chorizo this way creates a wonderful sauce perfect for dipping bread or pieces of fried potato into. It also goes really well with wedges of Tortilla, the Spanish potato & onion omelette.

Serves 4 as a tapas or as a starter.

  • 250g whole mini chorizo or cooking Chorizo cut into thick slices
  • 1 large garlic clove thinly sliced
  • 1 tbsp extra virgin olive oil
  • 90ml red wine
  1. Heat the olive oil in a frying pan over medium heat and sauté the chorizo until it starts to crisp up
  2. Now add the garlic and fry for a minute more.
  3. Add the red wine and allow to bubble for a couple of minutes.
  4. Serve piping hot with crusty bread.
