Chorizo & Chickpea stew

Our perfect winter warmer

This is a weekly staple of the winter months in our household and generally we make extra as it freezes well or is great for lunch later in the week. This really needs to be served with hot buttered soda bread.

  1. Fry the onion and garlic in olive oil until beginning to soften.
  2. Add the chorizo and fry until beginning to crisp up.
  3. Add tomatoes, paprika, oregano, chickpeas, stock cube and 250ml water and simmer until the chickpeas are tender and the sauce has thickened.
  4. Serve with the chopped parsley, crumbled feta cheese and a drizzle of sherry vinegar.
